Oreo Double Choc Cookie Bars

.....Gooey Oreo Double Chocolate Cookie Bars.....

This cookie bar is super rich, gooey, chocolatey and caramely with a delicious buttery Oreo crunch base! *drool*. I made the batch to serve to the in laws as an after dinner treat which went down very well - as did the remainder of the batch with my office!

Ingredients
  • 24 Oreos (two standard packs)
  • 56g butter (melted)
  • 1 (392g) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 200g milk chocolate chips
Method
  1. Preheat the oven to 165 degrees C.
  2. Set aside 6 cookies and grind the rest in a food processor or blender. In a small bowl, stir together the cookie crumbs and butter until well blended. *Press firmly and evenly into the bottom of an 11x13 inch pan.
  3. In the microwave (in 15second bursts), melt 100g of chocolate chips together with the condensed milk and vanilla extract. Stir frequently until smooth. Spread evenly over the crumb crust. Sprinkle the remaining cup of chocolate chips over the top. Break the 6 remaining cookies into pieces by hand and sprinkle over the top.
  4. Bake for 20 to 25 minutes in the preheated oven. Allow to cool/set completely in the tin before cutting into bars or it will make a big mess!

*i lined my tin with baking parchment to allow the bar to be lifted out before cutting into pieces, i recommend you do this; where the mix had gone through onto the tin it was stuck fast, i wouldn't have fancied hacking the bars out of there and i would have lost the chewy caramelised edges the outer pieces had.

I only managed to take one pic, they were so quick to make - and were eaten in no time at all! :)

Enjoy!

A friend of mine shared this recipe on her Facebook page, but think it originated on allrecipies.com.

Peanut Butter Brownies

......Perfect Peanut Butter Brownies......

This recipe is from bbcgoodfood.com and is absolutely foolproof, it works perfectly everytime.  The recipe is so quick and easy, and the brownies look like they took so much more effort than they do thanks to the luxurious chocolate drizzle at the end…..

The best part? They are DELICIOUS!

Ingredients

225g crunchy peanut butter
200g bar dark chocolate , broken into pieces
280g soft light brown sugar
3 medium eggs
100g self-raising flour

Method

  1. Set aside 50g each of the peanut butter and chocolate. Heat oven to 180C/160C fan/gas 4 and line a 20cm square baking tin with baking parchment.
  2. In a pan gently melt remaining peanut butter, chocolate and all the sugar, stirring occasionally, until the sugar has just about melted. Turn off heat and allow to cool for a few minutes before using a wooden spoon to beat in the eggs one by one. (make sure you give it cooling time so the eggs don’t scramble on contact with the hot ingredients!) Stir in the flour and scrape into the tin.

 3. Melt reserved peanut butter in the microwave on High for 45 secs, (in 15second bursts so as not to burn the butter), until runny, then drizzle over the brownie. Bake for 30-35 mins until it has a crust, but the middle still seems slightly uncooked.

4. Melt reserved chocolate in microwave in 15second bursts until completely melted, drizzle over the brownie, then cool in the tin before cutting into squares.

Enjoy!
